Lemon Ricotta Cookies Submitted by Cheryl Ritacco , COO

Editor ’ s Note : Cheryl has to bring these to the office every year to avoid a riot . This entire project was a ploy to get this recipe . Enjoy !

INGREDIENTS Cookies
• 2 ½ cups flour
• 1 tsp baking powder
• 1 tsp salt
• 1 stick unsalted butter , softened
• 2 cups sugar
• 2 eggs
• 1 ( 15 oz ) container whole mild ricotta cheese
• 3 tablespoons lemon juice
• 1 lemon , zested
Glaze
• 1 ½ cups powdered sugar
• 3 tbsp lemon juice
• 1 lemon , zested
DIRECTIONS 1 . Preheat oven to 375 ° F . 2 . In a medium bowl , combine the flour , baking powder and salt . Set aside . 3 . In a large bowl , combine the butter and the sugar . Beat the butter and sugar until light and fluffy . Add the eggs , one at a time , beating until incorporated . Add the ricotta cheese , lemon juice and lemon zest . Beat to combine . 4 . Stir dry ingredients into wet ingredients . 5 . Line 2 baking sheets with parchment paper . Spoon the dough ( 1 tablespoon for each cookie ) onto the baking sheets . Bake for 10 minutes , until slightly golden at the edges . Remove from oven and let cookies cool .
6 . For glaze , combine the powdered sugar , lemon juice and lemon zest in a small bowl and stir until smooth . Dip tops of cooled cookies in glaze . Let glaze harden before packing cookies into a container .
