Sweet Potatoes Submitted by Laura Bloom , Senior Designer | Serves 8-10

I like to pass this off as a side , even though it ’ s really more of a dessert !

INGREDIENTS Potatoes
• 6 large sweet potatoes ( peeled , diced , cooked and mashed – I put mine through a hand ricer / food mill so they are really smooth )
• 1 cup sugar
• 4 eggs
• 2 tsp of vanilla
• 2 / 3 cup milk
• 1 cup butter
Topping
• 1 cup brown sugar
• 2 / 3 cup flour
• 2 / 3 cup butter
• 2 cups chopped pecans
DIRECTIONS 1 . Preheat oven to 350 ° F . 2 . Combine all of the potato ingredients until smooth and put into a greased casserole dish ( I use a 9x12 because this is actually a double recipe because everyone eats it ).
3 . Combine the topping ingredients , sprinkle over top of the sweet potatoes and bake for 30 minutes .

This was my great-grandmother ’ s potato casserole dish . Everyone always loved it , including me ( and as a kid , I was the pickiest eater in my family ). I have never shared it , but I know Mimi would be proud to know I did !

INGREDIENTS
• 2 lbs frozen hash brown potatoes
• ½ cup melted butter
• 1 tsp salt
• ½ tsp pepper
• ½ cup chopped onion
• 1 can cream of chicken soup
• 1 pint sour cream
• 8 oz grated sharp cheddar cheese
• 2 cups crushed cornflakes
• ¼ cup melted butter
DIRECTIONS : 1 . Preheat oven to 350 ° F . 2 . Slightly thaw potatoes . 3 . Combine ½ cup butter , seasonings , onion , soup , sour cream and cheese . Blend thoroughly and pour into casserole dish .
4 . Top with mixed cornflakes and ¼ cup melted butter .
5 . Bake for 1.5 hours .
