Cheryl ( our COO ) treated all of us to a homemade breakfast one morning , and this was my favorite dish . She was kind enough to pass along the recipe and let me pass it off as my own !
INGREDIENTS
• 1 ½ cups rolled oats
• 1 cup quinoa
• 1 cup chopped pecans
• ¾ cup shredded unsweetened coconut
• 1 / 3 cup brown sugar
• 1 tsp salt
• 1 / 3 cup maple syrup
• 1 / 3 cup canola oil
• 3 tbsp cocoa powder
• 1 tsp vanilla extract
• 1 cup dried cranberries
• 1 cup semi-sweet chocolate chips
DIRECTIONS 1 . Preheat oven to 250 ° F . 2 . In a large bowl , mix together oats , quinoa , coconut , brown sugar and salt . 3 . In a small bowl , whisk together maple syrup , oil , cocoa powder and vanilla . 4 . Pour the liquids into the dry ingredients and stir until the mixture is well incorporated . 5 . Pour onto two sheet pans lined with parchment . 6 . Press the mixture down firmly so that it forms a fairly solid mass ( this will help it become nice and clumpy )! 7 . Bake for one hour , rotating baking sheets halfway through . 8 . Cool for 15 minutes . Once cooled , add dried cranberries and chocolate chips .

This is a fall family favorite from my sister Kathy . We start baking it around back-to-school and keep it up through Thanksgiving and into Christmas . The smell alone is worth it !
INGREDIENTS
• 4 eggs ( beaten )
• 1 cup oil
• 14 oz can pumpkin
• 3 ½ cups flour
• 3 cups sugar
• 1 tsp baking powder
• 2 tsp salt
• 1 tsp each : cinnamon , allspice , nutmeg
• 2 / 3 cup water
DIRECTIONS : 1 . Preheat oven to 350 ° F . 2 . Combine eggs , oil , sugar and pumpkin and beat until smooth . 3 . Mix dry ingredients together . 4 . Combine wet and dry ingredients . 5 . Now , add water . 6 . Pour into two greased loaf pans . 7 . Bake at 350 ° F for 1 hour .
