The best ( and arguably worst ) part of a shared office kitchen are the homemade treats that appear around the holidays . Even the non-cooks among us roll up our sleeves and make something from scratch . In the spirit of the season , we ’ re sharing some of our favorites . Buon appetito !

BREAKFAST

Mini Pancakes Submitted by Rebecca Brayman , Art Director | Makes 8-10 mini pancakes

These mini pancakes are a weekend and holiday breakfast tradition in our family . They ’ re a hit with the little ones and those young at heart !

INGREDIENTS
• 1 cup all-purpose flour
• 2 tsp baking powder
• ½ tsp salt
• 1 cup milk
• 2 large eggs
• 1 tbsp of olive oil
• 1 tbsp chia seeds
• 1 tbsp hemp hearts
• Ceylon Cinnamon ( I don ’ t measure this , but add until the mix smells good !)
• 1 ripe banana
• 1 apple
DIRECTIONS : 1 . In a small bowl , whisk together flour , baking powder , salt , chia seeds and hemp hearts . 2 . Whisk in oil , eggs , milk . This batter is on the thicker side , so if you prefer a thinner consistency , add more milk . 3 . Incorporate diced apple and mashed banana into mix . 4 . Let batter rest for 10 minutes . 5 . I typically use an electric griddle with a 6-hole baking plate , but you can also heat a large skillet ( nonstick or cast-iron ) or griddle over medium . Spray with oil and spoon batter onto skillet . Mini pancakes are about 1.5 spoonfuls , but make to the size you like ! Cook until pancake surface has a few bubbles and then flip over for about 1-2 minutes on the other side .
6 . Serve up with jam or maple syrup for a cozy treat !
