This was my Nana ’ s sausage soup recipe . My cousin has recently been making it for holidays and everyone enjoys it . I ’ m glad she brought it back as a new tradition and I look forward to having it this year !

INGREDIENTS
• 1 lb Italian sausage , out of casing and crumbled
• 1 clove garlic
• 1 large onion , cut into eighths
• 28 oz can whole peeled tomatoes
• 3 14-oz cans beef broth
• 1 ½ cups dry red wine
• ½ tsp basil
• 3 tbsp chopped parsley
• 1 medium green pepper , sliced
• 2 medium zucchini , sliced
• Cooked pasta of choice ( shells and tortellini work well !)
DIRECTIONS : 1 . Saute sausage with garlic and onions . 2 . Drain all but 2 tbsp fat . 3 . Stir in tomatoes , broth , wine and basil ; bring to a boil , cover and simmer for 30 minutes . 4 . Add parsley , green pepper and zucchini ; simmer another 25-30 minutes . 5 . Add cooked pasta and serve .
